VINIFICATION & AGING : Fermented using only wild yeasts, and slowly racked to avoid filtration. The wine is then aged for 12 months in 1 year old French barrels.
Tasting Notes
With deep color and a vivacious bouquet, the wine shows aromatic wild-flowers and blackberries. On the palate generous layers of mixed bramble, sweet herbs, and dried rose petals. Lingering with savory acidity.
