Le Pas de la Dame, in Arzens, covers 26 ha of vines. Merlot, Cabernet Franc, Cabernet Sauvignon, Pinot Noir, Malbec, Syrah, Grenache and Chardonnay. From vine to wine, special attention is paid to the inputs used, so as to use only what is strictly necessary. The management of the operation is thus reasoned according to the vegetative stage, the pressure of diseases and the meteorological conditions (adherence to the Natura 2000 Charter). Likewise, during winemaking, alcoholic fermentations are carried out with indigenous yeasts (naturally present in grape berries), that is to say that there is no addition of commercial yeasts.
