Chocolate. Whether we like ours dark or white, with nuts or with raisins, we always know what we are getting. A rich, sinful treat to soothe the soul. And maybe that’s what most of us expect it to be – something nice and familiar to satisfy our taste buds.

But here to change the game is Singaporean brand Fossa Chocolate. Swinging into the market with bold ideas and a passion for Asian flavours, the award-winning chocolate maker is here to make chocolate a whole lot less predictable. To captivate not just our taste buds, but also our imagination. 

Case in point: Chili Peanut Praline, one of their bestsellers. This chocolate builds on the nutty foundation of organic cacao beans from Pak Eddy’s farm in Indonesia and marries that with an unexpected pairing – satay. Spicy, sweet and creamy, the layers unfold bit by bit as you’re greeted with a rich peanut fragrance, before the spice kicks in for a unique mix of Southeast Asian flavours.

Their tantalising new creation, the Honey Orchid Dancong Oolong, is no less charming. Its distinct guava-like aroma emanates from the dancong tea cultivated in the Phoenix Mountain of Guangdong Province. Fuse that with the biscuit-y Kokoa Kamili cacao from Tanzania and a unique and refreshing symphone of flavour is born.

But make no mistake, Fossa Chocolate isn’t just about being exotic or exciting. They are also very much about quality, and it all begins with careful curation of quality cacao. Sourcing their beans from trusted producers around the world, Fossa works only with farms that place emphasis on proper fermentation practices which allow for the development of more complex flavours.

Unlike most commercial chocolates, Fossa’s creations are made from scratch, rather than with couverture or compounds. And you can rest assured that they don’t use any of that artificial sweetener nonsense. 

In just two years, what started off originally as a home experiment has since evolved into a bean-to-bar magnum opus. Fossa Chocolate is now home to a wide variety of chocolates – everything from single-origin favourites to exotic Asian-inspired flavours like Salted Egg Cereal, White Sesame & Seaweed, and even flavours incorporating Shrimp & Bonito.
