The late harvest of Petit Manseng from Domaine Bayard in 2018 gave us an extraordinarily powerful juice combining the scents of candied citrus fruits (typical of Manseng grape varieties) with the pearly juice of black figs during the Indian summer in the gardens of Bearnaise residences.
After two years of vinification in new unfilled oak barrels to cause oxidation with the air, like a sailing wine, the barrel left for Aragon on July 22, 2020 in the highest Bodega in the Iberian Peninsula (1300 m altitude).
Placed outside at the foot of a stone wall, it rose to 42°C in August then dropped to -15°C in December!
