The vineyard is run without any chemical products. They prefer working manually to preserve the vines and harvest wholesome grapes.
The harvest is manual, each bunch is sorted to keep the best grapes only. During the vinifications too, there is no chemical input and the natural yeast are used for the fermentation. The wines are non-filtered and the utilisation of sulphit is minimal.

Tasting Notes :
The Cebenna shows off blackcurrant and plum nuances, along with just a hint of licorice whip and saddle leather to keep things interesting. This medium bodied red finishes with deep cherry notes, and fine, dusty tannins which make it the perfect match to grilled quail, roasted saddle of rabbit wrapped in bacon, or a hearty style cheese wrapped in herbs, like Brindamour.
